Snow Crab, Green Apple and Cucumber Salad

Ingredients needed

  • 4 segments Quebec snow crab legs, cooked on boat and cleaned

  • 2 Granny Smith apples

  • ½ cucumber

  • 30 g (1 oz) fresh horseradish, grated

  • Juice of half a lemon

  • 2 green onions, thinly sliced

  • 50 g (1 ¾ oz) sour cream

  • Salt and pepper to taste

  • A drizzle of Favuzzi orange oil

  • A handful of lamb’s lettuce or arugula leaves

  • Favuzzi spicy italian herbs mix

Steps of preparation

  1. Carefully remove crab meat from the leg segments.
  2. Coat with a bit of Favuzzi orange oil and set aside.
  3. Peel the apples and cucumber, then cut into small 0.5-cm dice.
  4. Combine apple and cucumber with sour cream, horseradish, lemon juice, green onion and a bit of salt and freshly cracked pepper.
  5. Add crab meat and blend carefully.
  6. Just before serving, garnish with a few leaves of lamb’s lettuce or arugula, then sprinkle with Favuzzi spicy italian herbs mix.
