Snow Crab, Green Apple and Cucumber Salad

Ingredients needed

4 segments Quebec snow crab legs, cooked on boat and cleaned

2 Granny Smith apples

½ cucumber
-
30 g (1 oz) fresh horseradish, grated

Juice of half a lemon
-
2 green onions, thinly sliced

50 g (1 ¾ oz) sour cream
-
Salt and pepper to taste

A drizzle of Favuzzi orange oil

A handful of lamb’s lettuce or arugula leaves
-
Favuzzi spicy italian herbs mix

Steps of preparation
- Carefully remove crab meat from the leg segments.
- Coat with a bit of Favuzzi orange oil and set aside.
- Peel the apples and cucumber, then cut into small 0.5-cm dice.
- Combine apple and cucumber with sour cream, horseradish, lemon juice, green onion and a bit of salt and freshly cracked pepper.
- Add crab meat and blend carefully.
- Just before serving, garnish with a few leaves of lamb’s lettuce or arugula, then sprinkle with Favuzzi spicy italian herbs mix.
