Ingredients needed

  • 2 tbsp Favuzzi Delicate Extra virgin olive oil
  • 8 thin slices pancetta, chopped
  • 2 cups rapini, finely sliced
  • 1 clove garlic, finely chopped
  • 6 cups chicken or vegetable broth
  • 4 eggs, beaten
  • 4 tsp Favuzzi Cacio e Pepe seasoning

Steps of preparation

  1. Heat Favuzzi Delicate olive oil in a large saucepan over medium heat. Add rapini and pancetta and cook for 2 to 3 minutes, stirring constantly. 
  2. Add garlic and broth. Cover and bring to a boil.
  3. Meanwhile, combine beaten eggs and Favuzzi Cacio e Pepe seasoning in a bowl.
  4. Add the eggs to the broth, stirring with a fork for 1-2 minutes, until eggs are cooked. Serve immediately.
