This light gold vinegar has a finer texture and is not quite as sweet as a red balsamic vinegar. Its elegant and complex aromatic notes recall white fruit such as peaches or pears, with a hint of muscat dessert wine.
Description
Did you know that although we commonly use the term white balsamic, it's actually prohibited in Modena to use the words white and balsamic together, the later revered for the coloured version. Instead, the regulate term should be white condiment.
Favuzzi white condiments have a delicate taste. Produced with grape must concentrate and the same wine vinegars as the other balsamic, they do not undergo any aging and the grape must be clarified so that they retain their clarity.
The advantage of white balsamic is that it can be used in a variety of dishes without changing the colour. It's perfect for dressings, marinades, or even as a finishing touch on a dish. White balsamic vinegar pairs well with a variety of flavours. For salads, try pairing it with greens, roasted vegetables, or fruits such as strawberries or oranges. When using it as a marinade or in sauces, pair it with chicken, fish, pork, or beef. Some great pantry staples to have on hand to use with white balsamic vinegar include olive oil, herbs, salt, and pepper.

In addition to being an organic product, our Favuzzi white condiment contains no caramel, stabilizer, starch or glucose syrup. All its ingredients are derived from organic Italian raw materials, GMO-free and enjoying the highest level of organic certification. It has the lowest possible level of sulfites, fewer than 10 parts per million (practically nonexistent). Organic Italian grapes of the Trebbiano, Albana and Montuni varieties are crushed. The juice (or must) is immediately strained from the pulp, skin and seeds to avoid oxidation and colouring, then cooked. Organic white wine is added to the cooked white grape must to act as a fermentation agent.
Artisan
When they founded their vinegar factory in Italy's Modena region, Cesare Mazzetti and Marco Bombarda were building upon expertise passed down by their family from generation to generation. Today, Marco's younger brother Luca Bombarda is at the helm of the company, whose cave counts no fewer than 5,600 barrels of balsamic vinegar of Modena with a controlled designation of origin.
