Our delicately flavoured olive oil is made from Peranzana olives, cultivated with great care by the Guglielmi family in Puglia. Puglia, Italy is home to some of the world's most delicious olive oils. The mild climate and nutrient-rich soil provide the perfect conditions for growing olives. The Guglielmi family has been cultivating olives in Puglia for generations and their olive oil is some of the best you will ever taste. Peranzana olives, which are known for their subtle flavour, produce an olive oil that is perfect for subtle tasting dishes. It won't overpower your food, but it will enhance the natural flavours of whatever you're cooking. This makes it ideal for use in green salads, delicate white fish dishes, and lightly flavoured pasta dishes with lemon, cream or mushroom sauce.
The Peranzana olive is a cultivar that is believed to have originated in Puglia, Italy around 1300. The name Peranzana is thought to be a dialectal transformation of the word "Provenzale," which is derived from the Provence region of France. The Peranzana olive is a small, oval-shaped olive that has a high oil content and a fruity flavour with hints of almond. This olive is commonly used for both oil production and as a table olive.
Harvested in the first weeks of October, the olives are transported to the family's ultramodern olive mill where they are cold-pressed within two hours of being harvested to ensure that all their organoleptic properties are preserved. Such attention to detail has earned the Guglielmi family several industry accolades for the quality of their oils. In fact, this is precisely what has led Favuzzi to collaborate with them in creating this exceptional, delicate oil, as well as the robust oil produced from the Coratina: queen of the Puglia cultivars.

Conservation
Unlike wine, olive oil does not improve with age. It begins to alter as soon as it is produced and can become completely oxidized in just a few months if it is not stored in ideal conditions. It needs to be consumed rapidly for its full benefits to be enjoyed. To get the freshest oil on the market, choose one from the latest harvest, in a dark glass bottle. Avoid keeping the oil on the counter, exposed to light, and near the stove or other heat sources. Instead, store it in a cool, dry place. Close the bottle tightly after use to avoid exposing the oil to air, and consume within three months of opening.
